Burong Mangga (Pickled Mangos)

Makes 2x 500mL jars

Ingredients

  • 3 large mangos, slightly unripe
  • 3/4 cup white vinegar
  • 3/4 cup water
  • 3/4 cup sugar
  • 1 tsp kosher salt
  • (optional) 10 peppercorns
  • (optional) 4 whole cloves
  • (optional) 1-2 small hot peppers (eg. thai chili)

Instructions

  1. In a sauce pan, combine vinegar, water, sugar, and salt and heat to a simmer
  2. Wash and peel mangos
  3. Cut in half around the pit, then into slices
  4. Slice hot peppers, if using
  5. Pack the mangos into sterile mason jars with herbs divided between them
  6. Fill with brine
  7. Top up with water if needed
  8. Leave closed at room temperature for a day, then 1-2 days in the fridge before consuming
