Chocolate Ganache

    • 180mL (3/4c) heavy cream
    • 65g baking chocolate, finely chopped
    • 5g dutch-process cacao
    • 2 tbsp syrup (eg. maple o corn)

    Instructions

    1. Bring heavy cream to a simmer over medium heat
    2. Place chocolate and cacao in a bowl and pour the simmering cream over it
    3. Let sit for several 2-3 minutes
    4. Whisk together
    5. Stir in syrup
    6. Let sit for several minutes so it can thicken
