Vanilla Pastry Cream

    This can be made ahead of time.

    Ingredients

    • 475mL (2 cups) whole milk
    • 100g sugar
    • 25g cornstarch
    • 4 large egg yolks
    • 1 large egg
    • 2 tsp vanilla extract
    • 30g (2 tbsp) butter

    Strawberry version

    • 8oz strawberries, sliced
    • 2 tsp sugar
    • 2 tsp lemon juice

    Simmer, blend, strain, then whipe into vanilla pastry cream.

    Instructions

    1. Combine milk and one half of the sugar in a pot and cook on medium-high, bringing it to a simmer
    2. Combine remaining sugar, cornstarch, egg yolks and egg. Whisk until smooth
    3. Slowly pour the simmering milk mixture into the egg mixture, whisking quickly to avoid scrambling the eggs.
    4. Return everything to the pot on medium heat, whisking quickly to prevent burning. Cook for 1-2 minutes until it reaches a pudding like consistency.
    5. Remove from stove and add butter and vanilla, stirring until fully combined
    6. (Optional) Strain through a fine mesh strainer
    7. Cover directly with plastic wrap and chill for at least 2 hours.
