Makes enough to fit in a 250mL container

• 4 tbsp sichuan peppercorns
• ~12 star anise
• 2 tbsp fennel seeds
• 2 tbsp ground cinnamon
• 1 tsp ground clove

Toast the peppercorns in a heavy pan, until aromatic. Grind peppercorns, star anise, and fennel, and the mix all together.

Makes 200g of curry powder. All spices should be ground.

• 80g tumeric
• 40g coriander
• 30g cumin
• 10g cardamon
• 8g chili pepper
• 14g black pepper
• 8g clove
• 4g fennel
• 2g cinnamon
• 2g nutmeg
• 2g star anise

Mix together.
