  • 1/4c saké
  • 1/4c soy sauce
  • 1/2c mirin
  • 2"x2" piece of kombu
  • 1/2 - 1 cup katsuobonito

  1. Bring the sake to boil in a medium pot. Let the alcohol evaporate for a few seconds
