Rye Sourdough with Spices

Ingredients

For a single large loaf

  • 400g water
  • 70g sourdough starter
  • 245g rye flour
  • 245g all purpose flour
  • 44g molasses
  • 12g salt
  • 8g fennel seed
  • 3g caraway seed
  • 2g anise seed (or star anise)
  • zest of one orange

Instructions

Preparation:

  • Mix starter into water, and then add molasses, seeds, and orange zest
  • Combine flours and salt
  • gradually stir dry ingredients into wet
  • stir for a couple minutes at 15 minute intervals 2-3 times
  • cover and let rest 12-24 hours

Baking:

  • Stretch and fold dough and shape into boule
  • Place into baking form (eg. cast iron pot, etc.) for final rise about 1 - 1.5 hours
  • Pre-heat oven to 475F
  • score dough and bake ~30-40 minutes until the internal temperature is about 200F
