Shortbread
Ingredients
- 1 1/4 cup (10oz) softened butter
- 1/4 cup (1 oz) powdered sugar, sifted
- 1/4 cup (1.75 oz) white sugar
- 2 1/4 cup (12.5 oz) flour
Instructions
- Preheat oven to 275F
- Whisk the sugars together
- In a large bowl, cream the butter then add sugar
- Mix in the flour
- Let dough rest for 10 minutes
- Make 1" balls using 1 scant tablespoon of dough by first flattening with your palms then rolling together to prevent the edges from cracking
- Place balls on parchment lined baking tray with 1" between them and flatten with a cookie press, fork, or tumbler bottom
- Let dough rest for another 10 minutes
- Bake 30-60 minutes, watching carefully
- The cookies should not brown, though the edges may start to
- The edges of the cookie should be firm and not give under light pressure
- After cooling for a few minutes, the edges should be firm almost crispy, and the centre of the cookies crumbly
- Transfer to rack to cool completely
