Note: prepare the batter a day before baking
Ingredients
- 1 cup butter
 - 1 1/2 cup brown sugar, packed
 - 1/2 cup (295g) fancy molasses
 - 2 eggs
 - 4+ cups ((540g) flour
 - 2 tbsp ground ginger
 - 1/4 tsp ground allspice
 - 1/4 tsp ground nutmeg
 - 1/4 tsp ground clove
 - 1/4 tsp ground cinnamon
 - 2 tsp baking soda
 - 2 tsp vanilla extract
 
Instructions
- Preheat oven to 350F
 - Cream butter and sugar
 - Beat in molasses and eggs
 - Combine flour, spices, and baking soda
 - Stir gradually into batter
 - Add vanilla extract and combine
 - Continue adding extra flour (0-2 cups) until the dough reaches a firm and dry texture
 - (Optional) Wrap the dough and refrigerate for a day
 
- Let the dough come to room temperature before rolling out
 
- Roll out in sheets and cut into shapes (if desired)
 - Bake for 10-12 minutes at 350F
