Makes 1L of pickles
Ingredients
- 5-6 short persion cucumbers
- ~20g pickling salt
- 500mL water
- spices to taste
- 1 small carrot
- 1-2 small red radishes
- white vinegar (optional, to taste)
Instructions
- Rinse cucumbers, radish; peel and top the carrot
- Slice cucumbers into quarters or eights according to size or taste
- Finely chop carrots and radish
- In a separate container, add salt to water and stir until well disolved
- (optional) Add spices as desired to brine
- In a 1L jar, add in chopped carrot and radish
- Pack cucumber slices into the jar
- Fill the jar with the brine solution
- Leave on counter in a sunny spot for 1-3 days (it should start bubbling after a day or two)
- Transfer to fridge for storage when desired
- (optional) Add white vinegar to jar after initial fermentation to taste
