House Pickles

Makes 1L of pickles


  • 5-6 short persion cucumbers
  • ~20g pickling salt
  • 500mL water
  • spices to taste
  • 1 small carrot
  • 1-2 small red radishes
  • white vinegar (optional, to taste)


  1. Rinse cucumbers, radish; peel and top the carrot
  2. Slice cucumbers into quarters or eights according to size or taste
  3. Finely chop carrots and radish
  4. In a separate container, add salt to water and stir until well disolved
  5. (optional) Add spices as desired to brine
  6. In a 1L jar, add in chopped carrot and radish
  7. Pack cucumber slices into the jar
  8. Fill the jar with the brine solution
  9. Leave on counter in a sunny spot for 1-3 days (it should start bubbling after a day or two)
  10. Transfer to fridge for storage when desired
  11. (optional) Add white vinegar to jar after initial fermentation to taste
