Kohakutou (琥珀糖)

  • Ingredients

    • 10g agar agar
    • 250mL water
    • 250g sugar
    • colouring and flavouring as desired
    • glass container (eg. 8" x 8" or 8" by 4")

    Tea flavoured

    Green tea: 3g sencha steeped for 10 minutes

    • Note: this flavour is pretty subtle, it is worth increasing the steep time or the amount of tea

    Peach tisane: 1 bag (2.5-3g) steeped for 5 minutes

    Blueberry tisane: 1 bag steeped in 500mL for ~1 day (double batch). Sprinkle in tartaric and ascorbic acid until colour becomes bright red.

    Instructions

    1. Combine water (or tea) and agar agar and heat on medium until a simmer is reached
    2. Simmer 1-2 minutes while whisking
    3. Add sugar while continuing to whisk and simmer until the sugar dissolves completely
    4. Pour the mixture into a container
    5. (Optional) Add in any extra colours or flavours
    6. Let set 1-2h in fridge
    7. Remove from container, slice and let air dry on a wire rack or parchment lined pan, turning daily until dried
