Ingredients

  • 2 12 cups all purpose flour
  • 4 tsp baking powder
  • 14 cup white sugar
  • 23 - 34 cup water
  • 34 lb anko (about a half batch from this recipe)

Instructions

  • In a large bowl, mix flour & baking powder, and sugar
  • Slowly pour the water into the flour, stirring constantly
  • Knead the dough until smooth
  • Divide the dough into 12 parts, rolling each into balls
  • Flatten each ball and then put some anko (a teaspoon or little more) then wrap the dough around to close the bun
  • Place the balls on individually cut parchment paper squares (about 2” by 2”)
  • Steam on high heat for about 10 minutes
