Ingredients
- 1/4c saké
- 1/4c soy sauce
- 1/2c mirin
- 2"x2" piece of kombu
- 1/2 - 1 cup katsuobonito
Instructions
- Bring the sake to boil in a medium pot. Let the alcohol evaporate for a few seconds
- Add soy sauce, mirin, kombu, and katsubonito
- Bring to a boil and simmer on low for 5 minutes
- Remove from heat, strain, and let cool
