Ingredients
- ~400g buckwheat soba noodles
- shredded nori
- 6 tbsp Mentsuyu
- 1 1/2 cups iced water
- green onions (optional)
- wasabi (optional)
- tsukuemono (optional)
- tempura (optional)
Instructions
- Bring a pot of water to a boil. Do not add salt
- Cook the soba according to package instructions (~3 minutes)
- Drain the soba and rinse under cold running water to get the starch off
- Drain the soba completely and add to a bowl of iced water, let chill 30s, then drain and set aside.
- Dilute mentsuyu with an 1-3 amount of iced water, or to taste.
- Chop green onions, tsukuemono, or other toppings
- Serve with individual portions and individual dipping bowls. Garnish and dip noodles while eating
