Ingredients
- 14oz carrots, julienned into 4" sticks
- 2 garlic cloves, smashed
- 1 tsp five spice powder
- 0.5 tsp kosher salt
- 1/4 cup fresh lemon juice
- 2 tbsp white vinegar
- 1/2 cup water
Instructions
- Peel and trim carrots. Julienne to 4" sticks
- Place garlic in jar then pack in carrot sticks standing upright
- Bring to a boil in a small saucepan the five spice, salt, lemon juice, and white vinegar.
- Pour brine over carrots.
- Boil water and pour over carrots.
(Optional) For canning, process in a hot water bath for 15 minutes.
Let sit for 3 days before eating.
