Five Spice Pickled Carrots

Ingredients

  • 14oz carrots, julienned into 4" sticks
  • 2 garlic cloves, smashed
  • 1 tsp five spice powder
  • 0.5 tsp kosher salt
  • 1/4 cup fresh lemon juice
  • 2 tbsp white vinegar
  • 1/2 cup water

Instructions

  1. Peel and trim carrots. Julienne to 4" sticks
  2. Place garlic in jar then pack in carrot sticks standing upright
  3. Bring to a boil in a small saucepan the five spice, salt, lemon juice, and white vinegar.
  4. Pour brine over carrots.
  5. Boil water and pour over carrots.

(Optional) For canning, process in a hot water bath for 15 minutes.

Let sit for 3 days before eating.
