Ingredients
For a single large loaf
- 400g water
- 70g sourdough starter
- 245g rye flour
- 245g all purpose flour
- 44g molasses
- 12g salt
- 8g fennel seed
- 3g caraway seed
- 2g anise seed (or star anise)
- zest of one orange
Instructions
Preparation:
- Mix starter into water, and then add molasses, seeds, and orange zest
- Combine flours and salt
- gradually stir dry ingredients into wet
- stir for a couple minutes at 15 minute intervals 2-3 times
- cover and let rest 12-24 hours
Baking:
- Stretch and fold dough and shape into boule
- Place into baking form (eg. cast iron pot, etc.) for final rise about 1 - 1.5 hours
- Pre-heat oven to 475F
- score dough and bake ~30-40 minutes until the internal temperature is about 200F
