Makes 1 loaf, about 9" x 13"
Requires a stand mixer, don’t try this by hand.
Ingredients
- 280g water
- 50g olive oil
- 381g flour
- 7.5g salt
- 3.5g yeast
- 2g flaked salt
Topping ideas:

Strawberry Basil
- Bake with the strawberries on top and minced basil mixed into the dough

Lemon Pepper
- Flavour with 1 tbsp ground black pepper and 1 tbsp grated lemon zest mixed in to the dough
Instructions
- Mix water and half the olive oil
- Add in flour, yeast, and kosher salt
- Beat on low for 4 minutes.
- Add any mix-in flavourings then on medium low until it forms a smooth ball
- Cover and let rise in an oiled bowl for 1.5 hours, performing a stretch and fold every 30 minutes
- Coat pan with 1 tbsp of olive oil and gently stretch dough across the pan
- Cover and let rise for 30 minutes
- Dimple with fingers then cover and let rise another 30 minutes or until the dough is level with the pan rim
- Drizzle dough with remaining oil and sprinkle with flaked salt
- Add any toppings
- Bake @ 450F for 15 minutes, reduce to 425F and bake another 10 minutes or so until golden brown
- Let cool in pan for 10 minutes before removing to wire rack to complete cooling
- Apply any last minute garnishes (e.g. chili flakes or pepper)
