This is my riff on Doenjang Guk.

- 3 vegetable stock bullion cubes
- 1 tbsp vegetable oil / olive oil
- 1 dashi kombu sheet
- 2 tbsp chili bean paste (do ban jian)

- 2 tbsp rice vinegar
- 2 tbsp mirin
- 2 tbsp brown sugar

Ingredients
For a single loaf
- 530g (57%) spelt flour
- 350g (37%) water
- 10g ( 1%) salt
- 40g ( 5%) raw sugar
- 1/4 - 1/3 cup sourdough starter

- 80g tumeric
- 40g coriander
- 30g cumin
- 10g cardamon
- 8g chili pepper
- 14g black pepper
