  • 1/2 cup lime or lemon juice
  • 1/3 cup soy sauce
  • 2 tbsp rice vinegar
  • 2 tbsp mirin
  • 2 tbsp brown sugar

Spelt Sourdough

Ingredients

For a single loaf

  • 530g (57%) spelt flour
  • 350g (37%) water
  • 10g ( 1%) salt
  • 40g ( 5%) raw sugar
  • 1/4 - 1/3 cup sourdough starter

Japanese Curry Powder

  • 80g tumeric
  • 40g coriander
  • 30g cumin
  • 10g cardamon
  • 8g chili pepper
  • 14g black pepper
  • 8g clove
  • 4g fennel
  • 2g cinnamon
  • 2g nutmeg
  • 2g star anise
